Happy Spring! Who else is excited that it is FINALLY spring?!?

I thought I would go a little fruity with some chocolate covered strawberry cupcakes! Normally I make just the chocolate covered strawberries without the cupcake because they are such a healthy snack if you are craving chocolate.

While chocolate & strawberries have both been around for a really long time they weren’t combined until the 1960s! A women named Lorraine Lorusso, who worked at a small bakery in Chicago, combined the two one season when she had some ripe & juicy strawberries. She dipped her fresh fruit in some tempered chocolate and it became an instant success!

Chocolate covered strawberries are one of  my favorite healthy but still tasty snacks! What is your favorite healthy snack? What do you like to dip in chocolate??

Chocolate Covered Strawberry Cupcakes



  • 1 cup Water
  • 2 cups all-purpose flour.
  • 1 tsp Baking powder
  • 1 1/2 tsp Baking soda
  • 1 cup Brown sugar, packed
  • 3/4 cup Cocoa powder, unsweetened
  • 1 cup Granulated sugar
  • 1 tsp Kosher salt
  • 2 tsp Vanilla extract, pure
  • 1/2 cup Vegetable oil
  • 1/2 cup Sour cream
  • 3 eggs, at room temp.


  • Heavy Whipping Cream
  • Semi-sweet Chocolate

Chocolate Covered Strawberries

  • Fresh Strawberries
  • Semi-sweet Chocolate


For the cupcake

  1. Preheat oven to 350 degrees. Line the cupcake tin with liners.
  2. In a large bowl, whisk the oil and sugars together until combined.
  3. Whisk in the eggs one at a time.
  4. Add the sour cream and vanilla, and whisk until combined.
  5. Add flour, cocoa powder, espresso powder, baking soda, baking powder and salt, and stir until just combined. Batter will be thick.
  6. Stir in the warm water just until combined.
  7. Evenly put batter into each of the cupcake liners. Bake for 25- 35 minutes, or until a toothpick inserted into the center of the cakes comes clean.
  8. Let cool before frosting, tasty!

For the frosting

  1. Heat the cream up in a medium sauce pan. Let it get to a boil.
  2. Remove cream from heat once it is boiling and pour it over the chocolate chips in a medium sized bowl. Let sit for 10 mins.
  3. After 10 minutes, stir the cream and chocolate together until well combined. Let it cool for 10 mins.
  4. Pipe on top of the cupcake and put in the fridge.
  5. Chocolate Covered Strawberries

    • Wash the strawberries and dry them very well. You do not want water in your chocolate.
    • In a bowl, melt the chocolate so that it is runny.
    • Dunk a strawberry in the chocolate. Be sure not to over coat the berry. You want to make sure the leaves are out of the way and you don't want to dip the berry all the way in. 3/4 of the way is good.
