Pumpkin Spice Latte Cookies



  • 1 cup pumpkin puree
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 1 large egg, room temp.
  • 1/2 tsp. vanilla extract
  • 1 tsp. baking soda
  • 1 1/2 tsp. pumpkin pie spice
  • 2 tsp. baking powder
  • 1.2 tsp. salt
  • 2 cups of all purpose flour
  • 1 1/2 cups of Nestle Tollhouse Espresso Chips


For the cookies

  1. Heat oven to 375 degrees.
  2. Mix together the pumpkin puree, oil, sugar, egg and vanilla extract, mix until well combined.
  3. Add the baking soda, pumpkin pie spice, baking powder, salt and flour to the bowl. Stir until just combined.
  4. Fold in the chocolate chips.
  5. Cover the bowl and let the dough chill for one hour.
  6. Line a baking sheet with parchment paper. Place 2 tbsp. of batter onto the baking sheet. Press a few chocolate chips into the top of each cookie.
