Pumpkin Spice Cupcakes

Ingredients

  • 2 3/4 cups of all purpose flour
  • 1 tbsp. baking powder
  • 1 tsp. baking soda
  • 2 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/2 tsp. ginger
  • 2 cups of sugar
  • 1/2 tsp. salt
  • 1 1/2 sticks of butter
  • 4 eggs
  • 1/4 cup vegetable oil
  • 1 can pumpkin
  • 1/2 cup of milk
  • 1 tsp. vanilla

Directions

  1. Preheat oven to 325 degrees F. and line a cupcake tin with liners.
  2. Mix all dry ingredients together.
  3. Combine eggs, oil, pumpkin, milk, vanilla and butter.
  4. Slowly add 1/2 egg mixture to the dry mix.
  5. Slowly add the remaining egg mix in 2 pourings Beat for 20 seconds after each addition.
  6. Pour batter into each cupcake tin and bake cake for 30-35 mins.
  7. Combine the butter and cream cheese and mix together until smooth.
  8. Add the powdered sugar and vanilla. Then add the pumpkin spice mixture. Mix until well combined.
  9. Pipe on to cupcake using tip of choice.
